Aged predominantly in umeshu (Japanese apricot liqueur) casks, Hibiki is soft, spicy, round and smooth with no heat from ethanol and barely any tannin. There are notes of dark fruit compote, lapin cherry, and the sweetest kind of cigar smoke, more of a vanilla e-cigarette. The palate is buttery, round and soft; the finish long.

A world renowned Japanese blend, Hibiki 17 Year Old is made with aged malt and grain whiskies from Suntory's distilleries. Initially released in 1989, the blend is matured in Japanese mizunara oak casks at Yamazaki. Hibiki means harmony, which has certainly been achieved in this wonderful and iconic blend.

Malt whiskeys matured 12 years or longer are perfectly matched with mellow grain whiskies of the same age to create this Hibiki offering. Also included is some whisky from casks formerly used in long-term aging of Japanese plum liqueur, which helps bring out the sweet floral notes on the nose and palate that Suntory whisky is known for. Adding venerable malt aged more than 30 years further brings out the bouquet and adds body to the palate.

In celebration of a century of Japanese whisky, Chief Blender ​Shinji Fukuyo and his team of blenders challenged ​themselves to rethink the Art of Blending for Hibiki. They chose to use of the legendary Mizunara oak as a sign of respect for Japanese heritage, rather than the more traditional sherry cask. The final blend is an exploration of how ​a single detail can alter the whole alchemy, creating this extraordinary whisky.
