KI NO TEA is a product created in collaboration with tea-grower and blender Hori-Shichimeien, founded in the Meiji era in 1879 and based in the famous Uji region to the south of Kyoto city. A number of super-premium Uji teas have been specially selected to form the heart of KI NO TEA.
Tencha and gyokuro provide intense aromas and depth of flavour with a wonderful sweetness that occurs naturally in the distillation of these superior teas. These teas are blended carefully with a secret botanical recipe used only in KI NO TEA.
We use berries and herbs from the wilds of Norway and from our own botanical garden. Norwegian herbs and botanicals is among the world’s most flavorful due to the soil and geographical placement.

KI NO BI (“The Beauty of the Seasons”) is inspired by tradition and is distilled, blended and bottled in Kyoto. Our gin is made in a recognisably dry style, but with a distinct Japanese accent.
KI NO BI Kyoto Dry Gin is created with Japanese botanicals such as yellow yuzu from the north of Kyoto Prefecture, akamatsu wood chips (Japanese red pine), bamboo, gyokuro tea from the Uji region and green sanshō (Japanese peppercorn) berries. Bottled at 45.7% abv, KI NO BI uses a rice spirit base and pure ground water sourced from the famous sake-brewing district of Fushimi.
Mastering not only the science of distillation as others have done before, but also the age-old art of blending, we separate the botanicals in our gin into 6 Elements: Base, Citrus, Tea, Herbal, Spice and Fruity & Floral, and distil each category individually. Then we blend them in perfect harmony to create the distinctive KI NO BI flavour.
Barr Hill Gin is distilled once in a custom-built botanical extraction still with hand-crushed, organic juniper, and then finished with raw honey from the region. The raw honey contributes botanical depth from the countless wildflowers foraged by the bees.
About Death's Door Gin: Death's Door Gin has a surprisingly simple botanical mix of juniper berries, coriander and fennel. Using a mix of juniper berries that includes the wild juniper of Washington Island with coriander and fennel seeds, Death's Door Gin is able to showcase how complementary and complex simple expressions can be.
History of the Brand: Distilled in Wisconsin, USA, this gin is now produced at Dancing Goat Distillery in Cambridge, Wisconsin. After the original brand faced bankruptcy, the Dancing Goat family elected not to let this local favorite disappear. Instead and bought everything, from the recipes all the way to the stills, in order to transplant the operation to Cambridge, Wisconsin and continue producing one of Wisconsin's hometown favorites.

The Kyoto Distillery is proud to partner with an independent Scotch whisky producer, Kilchoman Distillery, for an innovative collaboration with KI NO BI Kyoto Dry Gin.
Kilchoman is a small-scale, farm-based distillery located on the Scottish island of Islay. The distillery grows barley and has maltings on-site for its single malt whiskies.
Edition K is matured in American oak barrels previously used for Kilchoman’s single malt whiskies, and is carefully monitored by the distillery team to ensure that the influence of smoke and peat are in perfect harmony with the original botanical blend.

T8ke's Tasting Notes: Incredible freshness on the nose: rainwater, citrus and crisp fuji apple, the juicy part of the apple just below the skin. Fresh tomato, the smell when you open that flimsy little container from the super market and wash them in the sink. Lovely botanicals: pepper, basil, coriander, a hint of juniper, lovely cucumber: wild bouquet. Sometimes I spend more time smelling this than drinking it. The palate is fresh and clean, it's crisp on the palate, not heavy and rich or syrupy. There's a lot going on for something that dances lightly: fuji apple and tomato, sea salt and citrus and lovely cucumber, pepper and fresh botanicals and a kiss of oregano. Quick, clean finish that's fresh and tomato driven but acidic, bright, citrusy and spritely. It's hard to describe but it's the quick, clean, bright finish that makes it so easy drinking and enticing. I'm off to have another.

Nose
