What Defines Mezcal?

  • Agave varietal – Espadín is the most common, but wild agaves like Tobalá, Madrecuixe, and Tepeztate produce rare, high-toned mezcals with distinctive profiles.
  • Production method – Agave hearts are roasted in underground pits, fermented in open-air vats, and distilled in small copper or clay stills.
  • Hand of the maker – No two batches are exactly alike; every mezcalero imparts their own touch.
