This ninth edition of William Heavenhill is comprised of only 34 barrels pulled from the 4th floor of Rickhouse LL at Schenley. These barrels were allowed to age for an impressive 15 years before being selected for this limited edition offering.

After full maturation in charred new American oak barrels, Penelope Bourbon is finished in a new, freshly toasted barrel. While it can be hard to predict the flavor profile of each bottle in our Toasted Series, the deep notes of vanilla imbued by the toasting process add another dimension to our signature flavor profile. Whether you’re into a Heavy Toast or Medium, our Toasted Series truly offers something for everyone.

- T8ke's Tasting Notes: Bright, spritely, expressive: beautiful peppers and spice pop on the nose: poblano, sweet bells and the tiniest pop of serrano join creamy, fresh, raspberry and orange sorbet, key lime, bright honeysuckle and vanilla bean on the nose. Wildly unique, bright, fresh, enticing. Rich on the palate, peppers pop first while some white pepper joins in the mix. There's a creamy, vanilla, dessert character on the palate that pairs nicely with the chiles and bells, the hint of citrus and touch of spice. Almost like a dallop of chile ice cream where it's rich and fatty, sweet, layered, with just a hint of contrasting flavor throughout - here it's the pop of citrus fruit and bell pepper, not the spice itself. Long finish, sweet and fresh, crisp and a pop of salinity and minerality cleanses the palate and leaves lovely citrus. This is a wild batch, perfect to close out the year with.

2013 Small Batch Limited Release Four Roses 125 Anniversary Bourbon
A mixture of 3 of the 10 Four Roses mashbill recipes all varying in age. Specifically the 125th anniversary edition contains a mixture of OBSV (18yrs), OBSK (13yrs), and OESK (13 yrs). Light traces of wheat, fresh berries and floral smells stand out with subtle aftertones of fresh nuts and new wood. A mixture of old leather and aged cedar like a cigar box on the palette. Additionally, the berry smell from the nose continues on in the palate and you get light hints of sweet berries and dried fruit.
One of the last years that Pappy Van Winkle 23 was bottled using Stitzel-Weller juice before Buffalo Trace began using its own barrels for producing Pappy Van Winkle.
Iconic original Stitzel Weller mashbill of the Pappy Van Winkle 20. This bottle is truly a unicorn as it was barreled in 1991 just as Van Winkle was on its rise. No other bourbon today can stand 20 years of aging, but this bourbon does it with style. Pappy Van Winkle was a true character. This bourbon, like Pappy, is full of the character that makes it a very special whiskey
In 1975, master distiller Charles L. Beam introduced Eagle Rare. The bourbon was originally produced at the Old Prentice Distillery in Lawrenceburg, Kentucky (today known as Four Roses). In 1989 Sazerac bought Eagle Rare from Seagrams and moved production to at the time George T. Stagg Distillery (today’s Buffalo Trace). This bottle is from the Old Prentice distillery in Lawrenceburg aged for 10 years and bottled at 90 proof.
