As you open the antique latch, it reveals a felt top that has been covering 2 hand-blown glasses and a bottle of Original Rip Van Winkle Bourbon Aged 10 Years laying gently and securely in a batch of hypoallergenic antique packing straw. A celebration of innovation, our rye whiskey is finished in hybrid American oak and cherry wood barrels for up to 6 months. Alternating cherry wood and oak staves toasted to custom specifications in the second finishing barrel, provide this 95% rye with unique bursts of flavor and represents the best of our collaborative, creative spirit.

Release number 4 from Rising tide spirits consists of 4 different variations. 

This variation of the highly limited and sought after release is hand curated barrel proof single barrels of rye.  This is the first time a rye has been featured in the rising tide spirits lineup and we could not be more excited to showcase this!  This is a pot still rye containing single barrels aged 12 or 13 years.   This is the first and ONLY time this Old Stubborn rye will be released.

This exclusive 7-year Kentucky Straight Bourbon Whiskey was handpicked during a Barrel-to-Bottle Experience at Provenance Estate, where the Georgetown Heritage Board explored a curated range of single barrels to select the one that best embodied the spirit of their work. The final choice is a beautifully balanced bourbon—rich, warm, and bold—reflecting the character and legacy of Georgetown itself.

Crafted from a classic Kentucky mashbill of 75% corn, 21% rye, and 4% malted barley, this single-barrel selection was distilled in Kentucky, aged for seven years, and bottled at a robust, cask strength of 126.4 proof, offering depth, nuance, and an unmistakably expressive finish.

Proceeds from this bottle directly support Georgetown Heritage and its ongoing efforts to preserve and restore historic structures, while expanding educational programming that connects communities to the natural and cultural beauty of the region.

T8ke's Tasting Notes: Rich nose with graham cracker, baked apples, sweet toffee and decadent vanilla. The palate is layered and complex; baking spices like cinnamon and nutmeg join cracked pepper, sweet vanilla, rich caramel, a hint of baked apple here with sweet pastry and a bit of brown butter. Moderate, clean finish with sweet desserts and spice, clean and precise with all dessert and no hug. It's decadent yet easy drinking, full of flavor and makes a silly good old fashioned.

• T8ke's Tasting Notes: Hefty and rye driven on the nose: bold sweetness, heavy rye spice, a crackle of ginger, toffee, oak, a hint of herbal pop, and gobs of sticky toffee and pleasant tannin. What strike me most is the ebb and flow of rye spice - peaking both on the palate and the nose: big sweetness gives way to pronounced rye spice, which gives way back to balancing oak, baking spice and undercurrents of sweet, dessert character. It has the vibrancy and the pop and crackle of the ryes I love most with the backbone, tannin and underlying sweetness to bring big complexity without shrouding how rye forward the pour is. Long finish, honey, cracked pepper, brown sugar and baking spice, hints of herbal and minty rye with cherries, tobacco and decadent spice. 

Bottled in 2015, Forged Oak is one of seven vintages of Diageo's Orphan Barrel Series. A pillar of strength rooted in time and wisdom, Forged Oak was found while foraging through the historic Stitzel-Weller rickhouses. This Kentucky Straight Bourbon Whiskey spent 15 contemplative years in charred American white oak barrels.

This rare bourbon ages in oak barrels for nearly two decades and is only available in small quantities once a year, every fall. Sip this polished, well-aged whiskey to appreciate why patience is such a virtue. The fragrant aroma has almost a wine-like character with hints of almond, cigar boxes and cinnamon. The delicate and dry mid-palate tastes of leather, vanilla and tobacco. This bourbon lingers, finishing with hint of leather and toffee.
