Offering up aromas of crisp stone fruit, tangerine oil, buttered toast, pear, almonds and clear honey, it's medium to full-bodied, ample and seamless, with bright acids and a pillowy, enveloping profile, concluding with a long, saline finish. Vincent Chaperon recalls that shatter at fruit set moderated yields and that a drying east wind in the weeks before harvest helped to maintain the good sanitation necessary to wait to pick at full maturity.”

- Tasting Notes: Rye spice drives the show once again, picking up loads of extra wine character along the way. Black tea, apple butter, sweet pear and beautiful honey, delicate creme brulee and flaky pastry drift by on the nose. Sauternes contributes impressive viscosity to the palate, complementing the savory and spice character of the rye. It's easy drinking, full of pear and apple, creme brulee and caramelized sugar, and a continued sweet tea note. Palate is long and rich, giving up some sweetness in favor of oak, pepper and luscious rye. Our first Sauternes cask leaned heavy on rye, this cask leans heavier on Sauternes, sacrificing some ABV proof points in favor of extra wine, viscosity and opulence.
Bottled at 94-proof, Single Barrel Select layers subtle notes of caramel and spice with bright fruit notes and sweet aromatics for a Tennessee Whiskey with one-of-a-kind flavor.
Medium slightly oily body, sweet with slightly astringent follow on the palate, oak, cocoa then pepper developing and causing the tongue to tingle around the edges pleasantly. Nice mixture of light fruits and medium dry finish with tingling rye on the tongue.

As the Founding House of Japanese Whisky and A House of Master Blenders, the House of Suntory has gone to great lengths to explore the breadth and depth of what Harmony can mean for a blend. Every Hibiki expression is one of the most sought after blends in the world where every Hibiki expression is meticulously crafted for us to discover a different kind of Harmony. Achieving the right balance and orchestration proved to be a great challenge from the start since the Sakura cask is one with strong character that can easily become overbearing.
After much trial and error, we found that the grain whiskies finished in the Sakura cask best elevated the overall balance as a Blossoming Harmony slowly unfolding. The end result is a particularly unique expression of Hibiki. The invitation of an enticing floral bouquet, followed by the signature Hibiki depth and complexity of honey, candied orange peel, jasmine and chocolatey decadence, all climaxing to a surprising finish of bitter sweet spicy notes.
