A private label bottling from the Berghoff restaurant in Chicago, this is a 10 year 86 proof Stitzel-Weller sourced bourbon. Glass bottle dating and tax strip range narrows down to 1978 for this particular expression. The Berghoff restaurant had a series of custom label private bottlings using sourced stitzel-weller distillate and are some of the most rare and sought after expressions for collectors today.

This is the fourth edition of William Heavenhill, and was distilled at Bernheim and bottled at cask strength 15 years later in Bardstown in a one-time run.
Bernheim is a historic Kentucky distillery. It was established by the Bernheim Brothers in the late 19th century, before passing into the hands of the Schenley company following the repeal of Prohibition. When Schenley were bought over by United Distillers in 1987, the distillery was rebuilt as the new owners looked to consolidate their production to a single facility. When United Distillers became Diageo in 1997, the new parent company were interested in bourbon, and sold the distillery to Heaven Hill. Heaven Hill were established in 1935, but their long-serving Bardstown distillery was lost in a devastating fire in 1996. Homeless for three years, the company acquired Bernheim in 1999, and have produced all of their whiskey there ever since.
Hennessy Paradis Imperial Cognac is the jewel of the Hennessy collection. An unprecedented alliance of age and finesse, it embodies the apogee of the art of selection and the relentless quest for finesse throughout eight generations of Master Blenders from the Fillioux family.
From any given harvest, the average number of eaux-de-vie with the potential to one day join this blend are rather rare: only 10 out of 10 000. Identifying and nurturing such finesse requires ultimate expertise and talent.
The Master Blender's savoir-faire is also to define the right ageing conditions to raise a fine eau-de-vie to its point of elegance, i.e. the decisive and fleeting moment when it reaches its apogee, ready to join the blend.
Hennessy Paradis Imperial is characterized by its unique character, combining unexpected contrasts and an elegant grace. Its golden hue is surprisingly lighter than that of other old cognacs. This is due to the use of mature oak casks, which have few tannins, to preserve finesse. Likewise, despite the age of its eaux-de-vie, Hennessy Paradis Imperial features a light structure and an absolutely delicate yet persistent finish thanks to its floral notes that are as pure and crisp as a spring day, edged with a smoky, spicy accent.

Unit price perThis distillery’s first-ever release of a 45-year-old Single Malt Scotch whisky, aged for over four decades and then finished in ice-fractured casks. This is the finale to an adventurous series of wild-whisky experiments - the third and last of the Xpedition Oak Series, a collection of rare, high-aged Single Malt whiskies.
Twelve heavily charred American Oak casks were taken on a Glacial Voyage into Canadian ice fields and exposed to sub-zero temperatures and raw, biting Arctic winds. The increased surface area available for the whisky to interact with the wood, during the finishing period, enabled the whisky to travel deeper into the casks and obtain spicier & sweeter aromas from the American Oak ex Bourbon barrels, to unearths new, resilient depths of this distilleries character
Nose: Rich, dry and mellow, with a light peppery prickle. Clear maritime top notes speak of seaweed and iodine; their glacial mineral companions suggest slaked lime and salt crystals. Below, complex sweet aromas hint at dried fruits and creamy vanilla, bringing depth and richness. Light smoke threads the background, touched by aromatic sandalwood. A drop of water adds a trace of almond toffee: the other aromas remain, joined by a note of hemp rope.
Palate: The texture is wondrously oil-smooth and mouth-filling; the taste starts toffee-sweet then becomes mouth-wateringly salty and increasingly peppery; even at this age there is a striking intensity to it, and a fine chili ‘catch’. A dash of water integrates these tastes. An attractive saltiness to the toffee now suggests salted caramels, with slightly less pepper.
Finish: Very long, with aglorious chili pepper effectand a trace of candle-wax;this grows in the aftertaste,in which both saltiness andpepper also persist. Saltierif water is added, with less pepper and faint scented smoke.
This is a wonderful expression distilled at the famous Stitzel Weller distillery, at a time when higher proof whiskey was not popular, in fact most of the highest proof whiskey being released was either 100pf or 101pf. This was a release that came in at 107pf and some bottles came with a hang tag note that says "this is what distillers drink" because with the slightly higher proof you can generally get more flavorful and thick whiskey. Stitzel Weller brought the wheated bourbon recipe into the spotlight and now wheated bourbons are some of the most sought after style of whiskey being produced, however none are able to replicate the intricate flavors from Stitzel Weller.
