• Tasting Notes: Rye spice drives the show once again, picking up loads of extra wine character along the way. Black tea, apple butter, sweet pear and beautiful honey, delicate creme brulee and flaky pastry drift by on the nose. Sauternes contributes impressive viscosity to the palate, complementing the savory and spice character of the rye. It's easy drinking, full of pear and apple, creme brulee and caramelized sugar, and a continued sweet tea note. Palate is long and rich, giving up some sweetness in favor of oak, pepper and luscious rye. Our first Sauternes cask leaned heavy on rye, this cask leans heavier on Sauternes, sacrificing some ABV proof points in favor of extra wine, viscosity and opulence. 

This was made in memory of Parker Beam. Very well balanced and mellow on the nose and palate. Sweet notes of mature dark rum, toffee, nougat and candy corn dovetail with dried apricot, golden raisin, hot cinnamon, soft mint tea, and vanilla. Polished leather and tobacco leaves on a long, contemplative finish. It is what an ultra-mature bourbon should taste like: all the depth and complexity that comes with this much aging without all the excessive oak. The wood is there, but it never crosses the line.

Buffalo Trace Distillery has recreated his traditional sour mash and produced a limited edition, one-time offering of Colonel E.H. Taylor, Jr. Old Fashioned Sour Mash Bourbon Whiskey for a true bourbon aficionado. A few years prior a gathering of Distillery retirees, a method was recounted for making "Old Fashioned Sour Mash whiskey. Edmund Hayes Taylor Jr. (EHTaylor) was known to use this technique in the late 1800's. Taylor's technique involved allowing the mash to sour naturally for days before distillation. Distilled in 2002, and bottled in 2012, this bourbon is a modern replication of this old-fashioned method. Using Taylor's original sourcing process, the result is a bourbon fo character and body like none other today. The combination of a rare estimated 10 year aging, winning the 2012 Gold Medal as one of the fifty best bourbons, and the extremely rare limited release make this bottle nearly impossible to find.

The auction generated almost a million dollars and was intended to be for the first ever hand selected single barrel of Pappy Van Winkle 15 year. This is not the first single barrel of Pappy Van Winkle 15 year, however it is as advertised by Buffalo Trace, the first actual selection of a single barrel.
