- T8ke's Tasting Notes:Warm pancakes and honey on the nose, syrupy and tobacco driven with lovely cinnamon, caramels, brown sugar and savory spices. It reminds me of our Pancake Breakfast release from way back in 2021 and it is lovely. Palate is rich and creamy, maple, blackberry, spicy rye, sweet cream and a hint of peaches, pancake syrup, and savory oak. Long finish, beautifully balanced at one of the higher proof releases I've had recently.

- T8ke's Tasting Notes: The quintessential rye king, these Piggyback barrels that are Vermont distilled are awesome crosses of quality and value - tons of big, bold, woody maple, herbal rye spice, toffee and black pepper that screams rye. At 6 years old and barrel strength, there's a rich palate, plenty of oak but without covering up sweet maple, peppy rye spice and an herbal note. Long finish, jammin' and lovely.

- T8ke's Tasting Notes: A yin to yang of the rye, this barrel of Piggyback bourbon is also Vermont distilled and it's lovely - big, rich, oaky, bold bourbon. Heavy caramel and baking spice, cinnamon and red hots, caramel candies and big oak. The palate is rich, some fruits mingle - berries, cherry and blackberry settle with more pepper and oak. The finish is long, full of vanilla, creamy corn, honey and a hint of tobacco.

Now comes Boss Hog XII: Feather & Flame: a single barrel, cask strength rye that takes a hard left turn into ancient Mexico tradition.
Matured in Pulque Curado de Cacao barrels, which have been seasoned with agave-fermented pulque and cured with cacao and Mexican chili peppers, it somehow manages to summon the complex essence of Xocolatl, the sacred chili chocolate drink that neither the Aztecs nor we, it seems, are able to get enough of.
It's the world's first Pulque Curado barrel finish for rye whiskey, because, apparently, regular barrel finishes have become too pedestrian for WhistlePig's ambitions. It also happens to be among WhistlePig's oldest rye whiskeys, not to mention among its most potent (with a powerful proof that clocks in between 104.8-108.4).
From the first nosing, you get caramel, dark chocolate, and orange zest that hints at the wild ride ahead. The palate delivers notes of bright citrus balanced by soft oak and cocoa with wave upon wave of subtle earthy spice, while the finish brings a dramatic one-two burst of savory cacao that gives way, marvelously, to herbaceous chili pepper.
A whisky that defies nearly every expectation … as it dazzles your mind and your palate, both.
