Cascahuín Special Edition 55-25 is a commemorative añejo tequila from Tequila Cascahuín in El Arenal, Jalisco. The 2025 release blends 90 percent tequila aged twelve months in ex-sherry casks with 10 percent of the distillery's 48-month añejo, bottled at 88 proof (44% ABV), additive-free. The numbers on the label carry the story: 1955, the year the family raised the modern Cascahuín distillery, and 2025, seventy years on.

The release also marks a quarter century since the family bottled its first traditional añejo, and the making of it reaches back further still. The agave, 100 percent Blue Weber harvested in 2017, was slow-cooked for 72 hours in traditional stone ovens, extracted on a roller mill, fermented in open-air tanks, and double distilled in copper pot stills at NOM 1123, where four generations of the Rosales family have worked since Salvador Rosales Briseño founded the house in 1904. Eight years passed between that harvest and this bottle, an unhurried timeline that says as much about the family's philosophy as any tasting note could.

The sherry wood defines the frame. The nose offers roasted agave with dried stone fruit, baking spice, and the nutty, oxidative notes of the casks. The palate is rich with buttered toffee, dark chocolate, and roasted agave, deepened by the 48-month component woven through the blend. The finish is long, buttery, and layered, closing with sherried fruit over soft oak and a warm, cocoa-dusted afterglow.

The 10 percent of four-year añejo is a small fraction with outsized effect, lending concentration and old-barrel depth well beyond the twelve-month age statement. As a one-time anniversary edition, 55-25 stands apart from Cascahuín's core line, equal parts drinking tequila and family milestone, and once this run is gone the recipe will not return. Pour it neat and unhurried; the sherry-cask layers reward a slow glass, and the 88-proof strength keeps the profile focused from first nose to final fade.
