This antique oak and age allowed for complexity and depth to develop. As we began to taste through each barrel, notes of dried fruit and cigar box are what we fell in love with. This bottle remains uncut and unfinished to highlight the elegance of aged whiskey.

  • Nose: Rich maple, bold baking spice, honey, cracked pepper, cinnamon, clove, toffee and rich oak. The nose is really expressive, dessert first, spice, then tannin.

  • Taste: Rich palate, viscous and layered. The proof carries a lot of the flavor through this chewy, decadent mouthfeel. Toffee and brown sugar pop first with notes of sweet oak, cinnamon, creme brulee. Light cola, icing, brown butter and big cinnamon roll sweetness develops over time and the oak shows through with plenty of spice.

  • Finish: Long finish, carries and carries with big dessert character, pleasant balanced oak, just a pop of ethanol and the right combination of sweet and spice.

Blade and Bow 12-Year-Old Solera Reserve opens with a graceful nose of red fruit, dried fig, and currant leading into a silky, layered palate. Caramelized sugar and dried fruit give way to almond toffee, cocoa, and dark cherry. The finish shows dark fruit and oak spice, supported by tannins and subtle wine acidity balanced by corn sweetness. The vat program contributes these distinct layers: Port and Bordeaux bring dark fruit and tannic structure. Cognac adds refined fruit esters and rancio, while Moscatel lends aromatic lift and sweetness—together creating a long, resonant finish.

Lochs of Jura Barrel Finish began with a bespoke blend of straight bourbon and rye before spending an additional 32 months in ex-bourbon and ex-sherry casks sourced from Scotland's remote Isle of Jura. Previously used to mature single malt Scotch whisky, the casks contribute layers of ripe fruit, soft malt, subtle smoke, and maritime character while preserving the whiskey's rich bourbon foundation.

At Bardstown Bourbon, we are relentless in pursuit of flavor and no whiskey typifies this like the Isle of Jura," said Callaway. "With just 238 residents, Jura is not just remote - its location offers a unique fingerprint of flavor singular to these barrels."

For 32 months the team worked around the 59-gallon sherry casks, too large to be stored in the ricks and instead placed in aisles of the warehouse. The resulting fruit character was worthy of the minor inconvenience.

The latest release in Bardstown Bourbon Company's acclaimed Discovery Series begins with an exceptional blend of 7, 10, and 11-year-old bourbons, showcasing the balance and complexity that have become hallmarks of the series. These high-floor barrels were selected for their balance of fruit and oak, making them perfect to take on the extra structure and sugar of double-barreling. A four-month finishing period in custom-made Garryana oak barrels adds subtle layers of spice and structure, complementing rather than overshadowing the mature Kentucky whiskey at its core.

This year's Discovery is the second Bardstown Bourbon release to explore this prized oak following the highly limited Distillery Reserve Cascadia released earlier this year.

Also known as Oregon White Oak, Garryana is native to the Pacific Northwest and grows most comfortably in the lush Willamette Valley. Prized for its strength and scarcity, its dense grain slows oxidation and evaporation and lends flavors like clove and nutmeg.

Presented at 112.8 proof (66.4% alc. by vol.), 2026 Discovery opens with layers of toasted oak, burnt sugar, and baked apple cobbler. Dried cherry and cinnamon bark emerge across the palate, leading to a long, warming finish accented by the distinctive influence of Garryana oak.

Rare Perfection 15 Year Old is a cask-strength Canadian Whisky from Preservation Distillery in Bardstown, Kentucky. Aged 15 years and bottled at 120 proof (60% ABV), this distinctive release is aged in 20 Year Very Olde St. Nick barrels, as stated on the bottle.

A vibrant expression bottled at 46.3% ABV, Harmony Collection Inspired by Fresh Coconut reveals notes of fresh coconut, citrus and tropical fruits layered with vanilla, sweet oak and gentle spice. The palate unfolds with coconut milk, zesty lime and soft sweetness, leading to a bright, floral finish.

Through precise cask selection and maturation expertise, our Whisky Mastery Team has skillfully drawn forward a nuanced coconut character rarely present in The Macallan, showcasing the balance between the science and art of whisky making.

Expressive and lively on the nose, the 2019 Silver Oak Napa Valley Cabernet Sauvignon has a black cherry and huckleberry aroma laced with dry floral notes. Integrated oak adds a light note of sweet nutmeg to this wine. Ruby in color, it has a fruit-forward entry with silky tannins that builds across the mid-palate and through a long and balanced finish. Structured while still approachable, this wine remains true to the signature Silver Oak winemaking style and will continue to improve through 2047 given proper cellaring conditions.

  • Nose:  Decadent maple and pie notes: brown butter, caramels, nougat, butterscotch and vanilla bean. Free of funk and heavy on decadent dessert, this Cuvee settles in for a Fall pour with notes of cinnamon, cola and butterscotch as you nose. 

  • Palate: Rich palate, viscous and layered. Chewy. Up front there’s rich cherry cola, molasses and maple candies, a hint of baking spice, toasted oak and cinnamon with a rich, oily texture. On the back palate the oak develops, subtle at first and brings a nice spine to the flavors all piled up. Cherry cola and rich pipe tobacco sit on the palate. Touch of espresso and hazelnut. 

  • Finish: The finish is long, the spice stays on the palate and fades on the finish with honeyed pastry, cherries, apple butter, brown sugar, fresh honey and light notes of pipe tobacco, oak and caramels to see it through

  • Overall: Maybe I can get ‘Cuvee of Kentucky’ to catch on. This is phenomenal stuff (I am biased). 

Lail Georgia Sauvignon Blanc (2022)

“Georgia is grown on our three-acre, dry-farmed estate vineyard in Yountville, called Totem. This exquisite, Graves-style (dry white Bordeaux) Sauvignon Blanc was fermented and aged in 70% new French oak barrels. It displays unprecedented depth and complexity, amazing texture, and a long lingering finish. Lail Vineyards was the first winery in the New World to produce a Sauvignon Blanc in this complex and captivating style, beginning with the 2002 vintage. The proprietary name celebrates the first member of the sixth generation of our family’s winemaking in Napa Valley, Georgia Eileen. It has been called by a leading wine writer ‘...California’s most complex and multi-dimensional Sauvignon Blanc.’”

“One of Napa’s most impressive examples of the variety, Lail’s 2022 Georgia Sauvignon Blanc—picked long before Labor Day’s scorching heat wave—features crushed stone notes, a subtle fumé character and fruity hints of lime, tangerine and guava. It’s medium to full-bodied, plump and expansive on the palate, revealing plenty of texture and length. The vineyard was originally planted by George Yount in 1839, but the current, dry-farmed vines “only” go back to 1988. Planted to Merlot then, it was grafted over to Sauvignon Blanc in 2006–2007.”
