Our most recent icon: an innovative expression of tequila that captures the transformative force that fire exerts upon agave.
The delicately smoky profile of this unaged spirit stems from the revival of ancestral tequila-making techniques.
The agave for this tequila is cooked slowly in a pit oven lined with firewood and volcanic stone, imparting subtle notes of smoke.
A special release from Tequila Ocho in collaboration with Heaven Hill, makers of Old Fitzgerald Bourbon. "Old Fitz" is a highly sought after, limited release Bourbon that is prized for the sweeter and softer flavor profile provided by the inclusion of wheat in the mashbill.
This Añejo is aged for 1 year and 1 day in barrels that had previously held the 10 year, 2023 release of Old Fitz.
Tequila Ocho produces Single Estate bottlings where all of the agaves for each batch they produce are harvested from the same field or rancho. The idea is show how the terroir of individual sites is expressed in each batch that is produced. They are focused on the expressiveness of the agaves so their aged bottlings are kept in barrel for the absolute minimum amount of time allowed by law for each category. Their releases are vintage dated and list the name of the site where the agaves came from. Although there is flavor variation from batch to batch (as is the point), they are always well made and highly representative of the Highlands of Jalisco where all of their sites are located.
Don Julio Anejo Tequila is a testament to the craft of making a superior tasting, aged tequila. Rich, distinctive and wonderfully complex, its flavor strikes the perfect balance between agave and hints of butterscotch and honey.

"For this limited edition, our Master Distiller Viridiana Tinoco created an aromatic añejo tequila that was aged for 25 months in American whiskey casks and finished in Armagnac casks."
Distilled in late 2008 with two-thirds of the distillate made in a double-copper column still with plates removed(this creates a lower distillation proof. The additional third was created with an alembic pot still by legendary Master Distiller and Tequilero Enrique Fonseca
Blend of 30% distilled volume aged in American white oak barrels previously used for California red wine / 70% distilled volume aged in dark French oak barrels
The barrels were laid to rest for 11 years in a very cool and dry environment of a subterranean barrel room with the upper-most portion of the room opened to allow for soft air circulation.
An age-old tradition from mezcaleros, Jamón Ibérico is typically produced in small batches for personal consumption as a ceremonial and festive mezcal, taking place at year-end. First, the agave is crushed, baked in earthen-oven pits, fermented and then distilled in a copper pot still. Organic cooked and seasoned pork shoulder with locally sourced aromatic herbs, spices, and seasonal fruits are added into the second and final distillation.
The Jamón Ibérico expresses a citrus-forward nose of lime and grapefruit with a tropical aroma of banana. A viscous mouthfeel coats the palate with savory flavors, complemented by a slight floral note of hibiscus flower.
G4 Clásico Blanco Tequila is a pure, additive-free expression of estate-grown Blue Weber agave from Arandas, Jalisco. Crafted by fourth-generation master distiller Felipe Camarena, this blanco tequila showcases the earthy complexity and minerality that G4 is known for - delivered with precision and authenticity straight from El Pandillo distillery.
Originally, mezcal was produced by blending ripe agaves found in the fields. The Master Mezcaleros selected the agaves, and even though they were different types, they carried out the entire production process.
Ensambles is our version of those original Mezcales, offering greater complexity and blending the flavors of the Maguey Espadín with wild varieties such as: Barril, Mexicano, Tepeztate, Tobalá, Coyote, Arroqueño and a special edition of four Agaves.
Father of Onofre and fourth generation Maestro Mezcalero himself, Alberto Ortiz has done what he does best, creating traditional mezcals naturally with zero additives. The flavors are vivid evoking sweet tomato, black pepper, dried chiles, coconut and a bright mineral finish.
The 2020 Fortaleza Winter Blend Reposado Tequila is a luxurious and exclusive blend made from three carefully selected barreled tequilas. Made from a combination of American oak ex-beer barrels, American oak ex-bourbon barrels, and French Oak barrels used to mature the 2019 Winter Blend, this tequila has a distinct and sophisticated flavor. The American oak selections were aged for at least 6 months, while the French oak juices were rested for 10 months. After careful marriage and a final touch of 46% ABV, only 7,050 bottles were produced, making this a highly sought-after and delightful tequila.
