KI NO BI (“The Beauty of the Seasons”) is inspired by tradition and is distilled, blended and bottled in Kyoto. Our gin is made in a recognisably dry style, but with a distinct Japanese accent.
KI NO BI Kyoto Dry Gin is created with Japanese botanicals such as yellow yuzu from the north of Kyoto Prefecture, akamatsu wood chips (Japanese red pine), bamboo, gyokuro tea from the Uji region and green sanshō (Japanese peppercorn) berries. Bottled at 45.7% abv, KI NO BI uses a rice spirit base and pure ground water sourced from the famous sake-brewing district of Fushimi.
Mastering not only the science of distillation as others have done before, but also the age-old art of blending, we separate the botanicals in our gin into 6 Elements: Base, Citrus, Tea, Herbal, Spice and Fruity & Floral, and distil each category individually. Then we blend them in perfect harmony to create the distinctive KI NO BI flavour.

Malt whiskeys matured 12 years or longer are perfectly matched with mellow grain whiskies of the same age to create this Hibiki offering. Also included is some whisky from casks formerly used in long-term aging of Japanese plum liqueur, which helps bring out the sweet floral notes on the nose and palate that Suntory whisky is known for. Adding venerable malt aged more than 30 years further brings out the bouquet and adds body to the palate.

T8ke's Tasting Notes: Incredible freshness on the nose: rainwater, citrus and crisp fuji apple, the juicy part of the apple just below the skin. Fresh tomato, the smell when you open that flimsy little container from the super market and wash them in the sink. Lovely botanicals: pepper, basil, coriander, a hint of juniper, lovely cucumber: wild bouquet. Sometimes I spend more time smelling this than drinking it. The palate is fresh and clean, it's crisp on the palate, not heavy and rich or syrupy. There's a lot going on for something that dances lightly: fuji apple and tomato, sea salt and citrus and lovely cucumber, pepper and fresh botanicals and a kiss of oregano. Quick, clean finish that's fresh and tomato driven but acidic, bright, citrusy and spritely. It's hard to describe but it's the quick, clean, bright finish that makes it so easy drinking and enticing. I'm off to have another.

For the 2025 release, wood science and maturation are key to the character of Bomberger's Declaration. Michter's Master of Maturation Andrea Wilson commented, "I'm so happy with the result. Once again Chinquapin barrels have contributed to the hallmark flavor of Bomberger's Declaration. For this year's release we used a spectrum of different barrels constructed from wood naturally seasoned outdoors in varying cases from 18 months to 3 years to 4 years to 5 years thus changing the chemistry of the oak's contributions during aging. The result is a bold and multi-dimensional experience to savor and enjoy."

Chichibu Distillery has its roots all the way back to the 1940s when Ichiro’s family started producing whisky at Hanyu Distillery. Eventually, the downturn of whisky in the 1990s forced Hanyu to close its doors. Ichiro still releases some of the Hanyu whisky under the Playing Card series. This whisky has become legendary alongside the whisky produced at his now-owned distillery, Chichibu. In 2008 he built his current distillery and has quickly become a Japanese Whisky fan favorite. Unit price perSmoothly creamy and really mouth-filling in texture, very sweet to taste at first then quickly drying, with a sprinkling of salt and a controlled smokiness. Drying in feel, and quite gentle. Fresh, clean phenols rise to the fore at once with aromas of a smoldering bonfire on a distant beach. Long, finally powerfully smoky and drying, with a twist of warming spice that also lingers in the aftertaste.

In the pursuit of intense and original flavors, our team set out to create a new generation of heirloom corn. The early growing years were curated by our team, with only the finest kernels selected for eventual growth in the fields. Years later, that corn – proprietary to Widow Jane - was harvested, driven to Red Hook and mashed, fermented & distilled, and placed into new, charred American oak barrels. The wait was a test of endurance, but the payoff? Exquisite. Because when you start with the finest raw materials, the result is extraordinary bourbon.
Baby Jane is a bourbon whiskey made from our own unique heirloom corn, “Baby Jane." This unique corn has depth, sweetness and creamy-spiciness that makes Baby Jane Bourbon truly different. Distilled by Widow Jane Distillery in Red Hook, Brooklyn and in Kentucky. True small batch bourbon; hand-assembled in Brooklyn, blended only a few barrels at a time. Non-chill filtered and proofed with our own mineral water from the legendary Rosendale mines of New York.

The whiskey aging process is influenced by time & place. Aren’t we lucky. These barrels have all been influenced by the greatly varying temperatures & humidity levels of their original source and their time in our rick house in Red Hook, Brooklyn. The different rick house positions combined with climate variations have led to subtle deviations in flavor, all coming together in a hyper small batches, little more than a handful of barrels at a time.
Aged for a minimum of thirteen years, non-chill filtered & proofed with our own limestone mineral water from the Legendary Rosendale Mines of NY, Lucky Thirteen is always a way to share good fortune.

Bottled in its purest form straight from the barrel, uncut at full proof. Master Distiller Jeff Arnett and his team of whiskey makers created this special release to honor that history of American whiskey when it was often high in rye content and offered at barrel strength.
