As I continue to learn and “do research” on bourbon, I’ve grown to appreciate stronger pours. That’s why I decided to bottle some of Fourth & Long at cask strength (125.6 proof).
I affectionately refer to this expression as “Empty Nester Strength.” When children finally leave the home, parents enter a unique stage in their journey. While empty nesters are often characterized as being victoriously liberated from parental responsibilities, they sometimes also experience a level of grief. The grip of love and fear that permeates parenting grows a little tighter. And some nights that calls for a stronger bourbon.

While I was thrilled to know a new child was on the way, a fear of uncertainty overtook me like a football team facing fourth and long. Parenting is hard. Raising three kids is exponentially harder. But much like going for it on fourth down, when you make it, there is a feeling of invincibility.
The same principles that inspired the previous versions of Fathertime have also guided the creation of our new release, Fourth & Long. This endeavor is still just me and Stu tasting barrels and putting together a smooth and delicious bourbon. Each bottle is personally signed by me, which was a pain in the ass but totally worth it – much like fatherhood.

Fathertime is a Kentucky bourbon from comedian Jim Gaffigan. Middle Child Mystery is the third expression, sold as a 750ml bottle.
New parents are often told, "Children are like pancakes. You always mess up the first one." Based on this Pancake Logic, a second or third child would be an improvement, right? Not if you listen to birth order conspiracies (aka “theories”). According to those, the middle child has "issues" because they don't receive enough attention. Like most parents, Jim would never ignore one of his children. Unless they were asking for a screen. Or money. Or if he was watching football. Well, despite all this birth order nonsense (“theory”), Jim’s middle child somehow earned the right to be his phone's wallpaper image, much to the dismay of the other pancakes. The middle child is often a mystery; but then again, so is most of parenting... which is probably why Jesus invented bourbon.

T8ke's Tasting Notes:
- Nose: Full, rich, vibrant: baked apple, cinnamon, maple and an icing note pops on the nose. There's cherry, orange peel, fuji and red delicious apple, cinnamon, brown butter and delicious maple candies that just emanates. Tons of sweetness, oakiness begins to show after a moment in the glass with a hint of char, loads of baking spice and maple with some light pipe tobacco and creamy, decadent, vanilla bean.
- Palate: Rich and layered, the supple, pillowy, opulent texture of the old Canadian marries well with the rich, faintly brash qualities of the Kentucky whiskey. Delivering rich brioche and cinnamon, fatty syrupy dessert characters like caramel and toffee and praline with notes of pepper, bold oak, a hint of pipe tobacco and gobs of brittle this becomes a sneaky beast. Hints of marmalade and deep, luxardo cherry develop with airtime.
- Finish: Long, long, holding, grippy, balanced. There's oak, it holds, it carries all of the dessert character, baking spice, toffee and a faint show of honey before satisfying oak, apple bake, vanilla bean and more brulee takes over.

Our exploration of American peat began years ago, but Solum Edition 1 is the first time that work is ready to be shared. This limited annual bottling of fifteen casks is distilled entirely from American peated malt from our friends at Skagit Valley Malting. Matured in a combination of new and used oak casks, the resulting whiskey offers familiar peat notes alongside something entirely new, a marker leading us into the future of American peat.

With Colere, we set out to chart the direct impact of barley on flavor. Each release begins to explore the thousands of new and forgotten varieties of barley whose flavor has yet to be considered. Edition 4 of Colere originates from Fritz barley, also known as NZ-151. This barley, derived from WSU's research, presents a variety of ester notes that present themselves in a bouquet of fruit tones that transition to an herbaceous finish.
The fourth release of the Booker’s Bourbon 2025 Collection is Booker’s Batch 2025-04, “Phantom Pipes Batch”. This batch is named after a curious discovery some of our engineers made in the distillery a few years back: a whole bunch of pipes that don’t lead anywhere at all.
