Xoriguer (pronounced sho-ri-gair) is the same today as it always has been. It is the result of distillation in traditional copper stills, using high quality wine alcohol and carefully selected juniper berries, which come from the neighbouring Mediterranean mountains, together with aromatic herbs. These herbs are the jealousy guarded "secret" of the liquor's original bouquet. Only the heirs of family know the identity and proportion of this valuable ingredient, which is added behind closed doors and without witnesses, at the start of each distilling. The respect for tradition is such that the fuel still used today in the distillation is wood. The distillation begins when the vapours which are produced in the still's boiler circulate through copper pipes until they reach a coil, where they condense, forming a precious liquid that drips into jars. An expert tastes the liquid at intervals to determine the precise moment when the distillation is complete. Once this is accomplished the gin is stored in large oak barrels, where it retains unchanging its colour, flavour and aroma, unti it is l finally bottled. Xoriguer, thanks to its unique character and to its distillation from natural products, is free of any unwanted additives which could impair its preservation or spoil any kind of cocktail or mixed drink.

The delicately smoky profile of this unaged spirit stems from the revival of ancestral tequila-making techniques.
The agave for this tequila is cooked slowly in a pit oven lined with firewood and volcanic stone, imparting subtle notes of smoke.

Nose

One of three new single barrels, OBSF has lush notes of apple, vanilla, and cocoa greeting the palate with a luxurious richness, while a bright touch of rye and a hint of brown sugar balance things out. The result is a bourbon with a lasting, full-bodied flavor that seamlessly marries sweetness with mellow spice to elevate all favorite bourbon-forward cocktails; however, this recipe is also enjoyed neat or on the rocks.

Released over 25 years ago in 1997, 17 Years Old was one of the first bottles to leave the Distillery after reopening. Unusually delicate, yet unmistakably Ardbeg, this whisky found a place in the hearts of the Committee, and set an extraordinary standard for our future.
Retired in 2004, Ardbeggians thought that was the last they’d see it. But, while times have been moving quietly on, its return has been years in the making. Dr Bill Lumsden has meticulously crafted this release to mirror the original, retracing the flavour profile note by note, and choosing to bottle at 40% strength, just as it was back then.

“Every fall, we do a Harvest Release, and back in 2017, our release was our flagship Bourbon finished with Applewood Staves. Of all our releases, this has been one of our most popular – so, this year we’re bringing it back Nationally,” says Woodinville Whiskey co-founder, Brett Carlile.

Tasting Notes: After the whiskey was fully mature, staves of toasted applewood were added. The finishing process adds depth and richness with aromas of apple and berry on the nose and palate on top of the traditional bourbon notes of rich caramel, dark chocolate and vanilla bean with a sweet lingering finish.
The 2021 Insignia captivates the senses with vibrant aromas of black cherry, hibiscus, and wild blackberry, subtly accented by fresh earth and a hint of Tahitian vanilla. On the palate, these dark fruit characteristics are harmonized with warm tones of redwood bark and baking spices. Plush, soft tannins and bright acidity enhance the length, complementing the rich fruit and savory undertones. A compelling tension infuses the wine with focused energy, promising it will express beautifully for years to come.

The first edition of Heaven Hill Grain to Glass Kentucky Straight Rye Whiskey aged for six years in rickhouse W3 on the third, fourth and fifth floors. It was bottled at barrel proof without chill filtration at 123.2 proof. The corn seed varietal chosen for this release was Beck’s 6158.
